Apple released iOS 17.0 officially for the general public on September 18th. The new update comes as the default iOS version on the brand-new iPhone 15 models, and you can update via OTA in Settings if you have one of the compatible devices (iPhone XS / XR or newer).
If you are interested in jailbreaking your device, however, you should avoid iOS 17.0 because, with this new update, Apple also patched a lot of vulnerabilities that security researchers can use for jailbreak purposes. Right now iOS 16.5 or lower is recommended if you are waiting for a jailbreak. If you don't care about jailbreaking, you may update to iOS 17 but do know that the features aren't quite stellar.
